Wild Game- A variety of protein

So this year has been pretty awesome for wild game. We have been able to add a ton of variety to our diet with all of the birds, fish and deer we got this year. For starters, Alli got me a guided fishing trip for my birthday this year and it was so fun! We caught a ton of fish in South Dakota. We reached our limit  at like 7 in the morning so we got to fish for trophy fish for the rest of the day. Around 9 am, I was reeling in a fish and the guide starts yelling  " OH MY WALTER" and  "GET IN HERE WALTER." I'm really not sure why he called it Walter but I guess that is the name of all big fish or something like that. Once I got the fish in the boat, I got pretty excited to after I realized it was a 28" walleye. My excitement didn't last because Alli embarrassed my fish with her small-mouth bass that was like 1/2" off the state record. It was such a fun day and we got to take our fish home. The guide insisted that we mount the walleye because it was a "catch of a lifetime." After one stupid decision and $400.00 later, I have a fish hanging above my desk.

Later in the year, our neighbor went duck hunting almost everyday. He got a ton of birds and could not eat all of it. So I got about 20 pounds of duck meat for free. Alli doesn't like it that well but that is ok with me. I have been grilling 4-5 a week and eating them after a workout. It is much cheaper than a protein shake or any other source of protein that I would have had to buy!

Finally, November 10, deer season arrived. My friend Chris, has been going crazy since like the end of season last year and it finally arrived. We went out on opening morning to two different stands and as soon as it gets light I hear him get one. Two seconds after I hear him shoot... My phone vibrates and it reads, " I GOT ONE ;)" All of his excitement and waiting was over in a matter of hours ha... I didn't see anything that morning. A couple days later I went down to the river and waited there for the evening. Sure enough, I pretty nice buck came rolling through and I got him. Now we have 70 pounds of deer that I plan on using to make more paleo jerky sticks with. I think Chris and i are going to go out again in a couple weeks. Hopefully I get another one so I can have some steaks and other cuts. The first thing I am going to do is make honey infused prune deer tagine, it looks amazing.
I love being able to hunt and fish in Nebraska. It is such a great opportunity to get a variety of proteins in our diet and it its very inexpensive. These animals live in their natural habitat and eat a natural diet so that is great for us! Hopefully there is more to come this year.

Paleo Jerky Sticks

Alli and I love to eat jerky. It is usually made from wild game with the exception of some grass fed beef once in a while. I love to switch up the recipe and find the best way to make it and I think I have finally found a winner. The great thing about it is that it has zero preservatives, it is soy-free, gluten free, GMO free, paleo-friendly, and it tastes really good! You can use whatever meat you like or have available and I would love to hear if you have any modifications to the recipe I post.

 Paleo Jerky Sticks
(This is a spicy version so if you prefer a more mild version cut back on the hotter spices or don't add the hot sauce)

  • 4lbs. Ground Elk Meat
  • 1lb. Ground Grass-Fed Beef (Local if possible)
  • 3/4 bottle of Coconut Secret Raw Coconut Aminos
  • 1/2 box of  Sun-Maid Zante Currants
  • 2T Black Pepper
  • 1.5t Salt
  • 2t Penzeys Garlic Powder
  • 1t Penzeys Smoked Paprika
  • .5-1t of Cayenne Pepper 
  • 1t  Allspice
  • 2T of your favorite hot sauce. I use one made locally with ghost peppers.

Put everything together in a bowl and mix it all together very good. I let mine sit in the refrigerator overnight so the flavors can really penetrate the ground meat.

Cooking the meat:
This process will vary depending on what you have but I use a Traeger grill and smoke the jerky. It turns out great and I highly recommend smoking it; however, I know that is not available to everyone so a dehydrator will work really good too, I am just not sure how long it will cook so keep an eye on it.

Take the meat from the refrigerator and load it into a jerky gun. I use the Cabela's Jerky Pistol and it works great. You can use the flat or the round style, I cook them both the same amount of time.

Fill your wire racks and place them into your smoking device at 170-180 degrees.

Let the jerky smoke for three hours checking halfway through just to make sure everything looks good. At three hours, flip the jerky over and continue to smoke for another 2-3 hours, depending on how done you prefer the jerky. Once it is finished, let it cool and enjoy.

I like to vacuum seal mine in bunches of 10 for emergency snacks. It works great for traveling! I plan to take several packs with us on our trip to Estes Park in a couple weeks! :)

A Little About Me

My name is Travis and I reside in Nebraska with my wife, Alli, and our dog Mopsi. I am 23 years old and I work full-time. I am also in the process of getting my degree online. I am studying business administration with hopes of one day creating my own consulting business. I love to workout and spend time with my amazing wife. She is the reason I am the person I am today and the only reason I have even heard of paleo! You are probably thinking, "why doesn't she write about this then if she knows more?" Well, she is extremely involved in our paleo-lifestyle but she is already writing (way more than what this blog requires). She is writing her first book and I cannot wait to read it! I get little snippets here and there but she will not reveal it to me until her work is complete. So, while she is making good use of her time, I decided that I would try to write on a blog and develop my social skills while she writes her book. We do not have kids but we do have a dog (treated like a kid). Her name is Mopsi and she is a Maltese-mix with an attitude. She tends to keep my on my toes. Mopsi has gone paleo as well, switching from Taste of the Wild kibble to raw dog food. I am pretty sure she loves her life, she is such a spoiled brat! Hopefully sometime this weekend, I can get a jerky recipe posted that I came up with. The family seems to enjoy it so I will share it with everyone.

First Post!

This is the first post of my first blog, so bear with me. I tired to start all the way back on July 15 but as we can all see that didn't work very well (Today is September 14). I am starting this blog because I want to be able to help people on the path to a healthier life. I have recently (more like 6 months ago) embarked on a paleo-lifestyle and it has changed my life. I feel amazing, my energy levels are better than they have ever been, my complexion, definition, and overall body image have improved immensely. I really feel like this is something that I should share with others and spread the paleo words of joy! I definitely do not have all the answers but I can help and talk about the great things I have done to improve my life. The title of my blog is the Loaf is Toast; this is referring to the fact that I feel much better without grains (not that I made toast). The main portion of my blog is going to discuss the paleo-lifestyle and some recipes every now and then. Sometimes I will touch on the workouts I am doing and the fun stuff going on in my life. I am not an expert by any means, therefore I will be referencing the real experts in my discussions. Sometimes I will throw in some random stuff like politics, charities, my dog, etc.  I hope to get a one blog per week to start and possibly more in the near future. I work full-time and I am a student as well so this is strictly a side project in an attempt to help and inform others. Comments and questions are always welcome and I will do my best to respond.
